Perfect snack or game day appetizer. Definitely a healthy pizza alternative when you use zucchini in the base of the ‘crust’ – love this recipe!

- 3 medium zucchini, shredded
- 3 eggs, beaten
- 1/2 cup flour
- 1 tsp salt
- 2 cups shredded mexi blend cheese
- Optional: red chili pepper flakes
Preheat oven to 425 degrees F. Line a rimmed cookie sheet with parchment paper.
Sprinkle the zucchini shreds with salt to release the liquids. Let sit for 10 minutes. Use a cheese cloth (or plenty of bounty paper towels) to squeeze the liquids out.
In a large bowl, mix the zucchini shreds, eggs, flour and salt. Transfer mixture to the prepared sheet and spread out into a thin rectangle.
Bake for 20-25 minutes or until edges are golden brown.
Remove from oven and lower heat to 350 degrees F.
Top the zucchini crust evenly with the shredded cheese. Place back in the oven and bake until cheese is bubbly and melted.
Allow to cool for 5 minutes and then slice with a pizza cutter.
Serve with warm marinara sauce for dipping!!
