When someone you love, loves white chocolate… this happens. An incredibly white chocolatey delicious dessert.
- 1/2 cup coconut oil (or butter)
- 2 eggs
- 1 cup sugar
- 1/2 tsp vanilla extract
- 1 cup oat flour* (or regular AP flour)
- 1/2 tsp salt
- 1 cup white chocolate chips
Preheat oven to 350 degrees F. Line an 8×8″ brownie pan with parchment paper (or spray with oil).
In a small pot, on low heat, melt the coconut oil. Next, add 1/2 cup of the white chocolate chips. Mix constantly with rubber spatula until smooth. Set aside to cool slightly.
In a large bowl, using a hand mixer, beat the eggs, sugar and vanilla for a few minutes. Beat in the oil mixture until just combined. Add the salt and flour (a little at a time) and mix to combine. Lastly, fold in the remaining 1/2 cup chocolate chips.
Transfer mixture to prepared brownie pan and spread out evenly with rubber spatula.
Bake for 25 minutes or until toothpick comes out clean.
Allow 15 minutes in pan to cool before slicing.
- If you don’t have store bought oat flour, don’t fret. You can make your own; just throw some old fashioned oats into your food processor and mix until they resemble flour consistency.
