A home run dish on every level. Always looking for ways to sneak some sweet potato into my food. I could eat this every week. And if your not into spicy, or your making them for kids, just omit the red pepper flakes – the flavors are more than enough. Lean protein with the turkey, delicious sweet potato and oh that turkey bacon… How can you not fall in love?
- 2 tsp olive oil
- 1 small yellow onion, chopped
- 2 garlic cloves, minced
- 2 medium sweet potatoes, peeled & finely cubed
- 2 strips turkey bacon, chopped
- 2 tbs chopped fresh sage
- 1/2 tsp red pepper flakes*
- sea salt and ground pepper to taste
- 1 lb ground turkey
- 1/2 cup bread crumb
- 1 large egg
Preheat oven to 400 F. Line a baking sheet with parchment paper.
In a large skillet, heat the olive oil on medium high. Add to it the onion, garlic, sweet potatoes & bacon and saute for about 10 minutes until sweet potato begins to brown and is just fork tender, lower the heat if need be. Next, add the sage, red pepper flakes, salt and pepper and cook for an additional minute. Remove and allow to cool before combining with the turkey.
In a large bowl, combine the turkey, bread crumb and egg. Add the vegetable mixture and season with 1 tsp salt and 1/2 tsp pepper. Use your hands to combine all ingredients. Form your meatballs.
Bake for 20 minutes or until cooked through.
Yields 4 servings.
*Add more red pepper flakes if you like it really HOT.
