sweet potato chocolate chip cookies

Another week, another breakfast/snack cookie.  Also, another way to utilize any leftover baked sweet potatoes.  And get a sweet snack from it.  These are cakey, healthy, hearty and naturally sweet.  GOT TO LOVE EM.  And they are dairy free.  Also, they would work with gluten free oat flour and gluten free oats.

Ingredients:

  • 1.5 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup sweet potato puree
  • 1/4 cup coconut oil, melted
  • 3/4 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups old fashioned oats
  • 1 cup dairy free chocolate chips

Directions:

Preheat oven to 375 F.  Line 2 cookie sheets with parchment paper.

In a medium bowl, whisk together the flour, salt, cinnamon and baking soda.  In a large bowl, using an electric hand mixer, beat the sweet potato, oil, sugar, eggs and vanilla until smooth.  Slowly add in the flour mixture and incorporate all.  Lastly, fold in the oats and chips.  Spoon mixture onto baking sheet and bake for 12-15 minutes or until golden brown.

Yields 22 cookies.
