For those nights when you’re all alone and don’t want that long term commitment. When you need that quick chocolate fix… this is the answer to those quick fix, sweet tooth urges. Perfect delicious brownie in a ramekin. And there is no need for self control at the end of this baking soiree. Once you eat the solo rider, you are finished. Gotta love that.

- 1 tsp coconut oil
- 1 tbs maple syrup*
- 1 tbs + 1 tsp flour**
- 1 tbs cacao powder
- pinch of salt
- pinch of baking powder
- 1 tbs dairy free chocolate chips
Preheat oven to 350 F. Place your small ramekin on a cookie sheet. Add the oil to the ramekin and place in the oven for a few minutes until oil has just melted.
Remove all from oven and mix in the rest of the ingredients until smooth. Top with the chocolate chips. Place ramekin (with/on cookie sheet) back into the oven for 6 minutes. Remove and enjoy immediately!
*Substitute in unsalted butter for the coconut oil and sub in honey for the maple syrup – but will no longer be vegan.
**Substitue in almond meal for the flour to make it flourless and gluten free.
