This bread loaf came out above and beyond all of my expectations. Like moist, store-bought slices of heaven with your coffee. Its combination of cinnamon sugar is quite obvious the right accompaniment to the apple chunks. LOVE.
Ingredients:
- 1.5 cups gluten free flour*
- 3/4 tsp xanthan gum
- 1.5 tsp baking powder
- 1.5 tsp baking soda
- 1/2 tsp salt
- 1/2 tbs cinnamon (+more)
- 1/2 cup coconut oil, melted & cooled
- 1 cup light brown sugar (+more)
- 2 eggs
- 1 tbs vanilla
- 1/2 cup milk of choice
- 1 large apple, peeled & finely chopped
Directions:
Preheat oven to 350 F. Spray or grease a 9×5″ loaf pan with coconut oil.
In a medium bowl, whisk together the first 6 ingredients. Set aside.
In a large bowl, mix the oil and 1 cup sugar until incorporated. Add the eggs, vanilla and beat using a hand mixer. Add the milk and beat until incorporated. Next, add in the flour mixture 1/3 cup at a time, and continue mixing until smooth and all is just combined.
In a small bowl, toss the chopped apple with 2 tbs brown sugar & 1 tsp cinnamon. Add half of this mixture into the batter and fold in. Transfer batter to loaf pan. Top with remaining apple cinnamon sugar mixture. Bake for 60-70 minutes. Loaf will be done when long toothpick comes out clean. Allow to cool in pan prior to inverting to remove from pan.
*If a gluten free diet is not a priority to you, just substitute in all purpose flour and omit the xanthan gum.
