I have always wanted to make these but was always concerned with the whole melting of the marshmallow in the oven thing and it oozing out of the cookies. Not to worry. Nothing of the sort happened. Quite obviously due to the refrigerating of the cookies overnight helping the process. These were so delicious .. if you love the marshmallow, chocolate & graham cracker combo (like me).. this is 1 million percent your cookie.
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup graham cracker crumbs
- 1 tsp cinnamon
- 1 cup unsalted butter, room temp.
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 2/3 cup chocolate chips
- 1.5 cups mini marshmallows
In a medium bowl, whisk together the first 7 ingredients (through cinnamon). Set aside.
In a large bowl, using an electric hand mixer, beat the butter and sugar until fluffy. Add the eggs, one at a time, and then the vanilla. Slowly add the flour mixture until just incorporated. Lastly, fold in the chocolate chips.
Create a ball with the dough, flatten it out, Stuff it with 4-5 marshmallows, then top with another flatten out dough ball and press together. Repeat.
Place cookies in large tupper, separating the layers with wax paper. Refrigerate overnight.
Preheat oven to 350 F. Transfer prepared cookies to parchment paper lined cookie sheet. Bake for 8-10 minutes. DO NOT OVER BAKE, even if they look uncooked. Remove cookies immediately from cookie sheet and place on wire rack to cool.
Yields 20 cookies.
