pizza quesadilla

The ideal snack or lunch if you’re into that whole pizza trend.  I urge you to use all ingredients listed below.  So easy and delicious.


  • 2 tortillas
  • 3 oz. pepperoni, cooked
  • 1/4 cup chopped olives
  • 1/2 green bell pepper, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1 cup shredded mozzarella cheese
  • Optional: marinara sauce for dipping & red pepper chili flakes


In a large skillet, heat each tortilla on medium low until warmed through, flipping constantly.  Add a thin layer of cheese to half of the tortilla.  Then generously layer the pepperoni, olive, pepper and onion.  Lastly, Add a thick layer of cheese and fold over the empty half of the tortilla.  Cover with a lid and adjust heat to low.  Cook until cheese has fully melted.  Remove from pan and slice in half.  Repeat steps with other tortilla.

Yields 2 servings.
