There is a lot of flavor coming from this dish with a semi kick. if you prefer a spicier taste, feel free to add more cayenne pepper to the spice mix.
this really was so easy to make and beyond delicious – cannot wait to try it again.. with a different type of fish.
- 1.5 lbs wild cod, sliced into fillets
• 1.5 tbs coconut oil, melted
• juice of half a lemon
• 2 small tomatoes, sliced
• 2 tbs grated Parmesan cheese
- 1/4 tsp sea salt
• 1/4 tsp paprika
• dash of cayenne pepper*
• dash of ground pepper
Preheat oven to 450 F.
Combine all spices in a small bowl and set aside (*add more cayenne if you prefer really spicy).
Place all fillets in a baking dish. Brush each filet with coconut oil, drizzle with lemon juice, and season with the spice mixture.
Top each fillet with 2-3 slices of tomato and sprinkle the tomatoes with Parmesan.
Bake for 20 minutes or until fish easily flakes.
Yields 4 servings.
