These bars are one of my favorites. More peanut buttery rather than chocolatey, but just the right amount of chocolate chunk in the center and on the top. Really my perfect mix. And the texture is so amazing.. chewy and thick. I cannot explain how good they are. You should definitely experience them for yourselves. Trust me.
- 6 tbs coconut oil, melted & cooled
- 3/4 cup coconut sugar
- 1/2 cup peanut butter
- 1 large egg + 1 yolk, beaten
- 1 tsp vanilla extract
- 1 cup gluten free flour*
- 1/4 tsp baking powder
- 1/4 tsp sea salt
- 3 oz chopped dark chocolate**
Preheat oven to 350 F. Line an 8×8″ brownie pan with parchment paper.
Combine the coconut oil and sugar. Next stir in the peanut butter and then the eggs & vanilla.
In a medium bowl, combine the flour, baking powder and salt. Add the dry mix to the wet mixture until just combined. Lastly fold in the chopped chocolate. Mixture will be like a thick cookie dough texture. Just spread it out and down in the pan, using your fingers.
Bake for 30-35 minutes.
Allow to cool for 1/2 an hour.
- 1 cup chocolate chips
- 1 tbs coconut oil
Melt the oil in a small sauce pan add the chocolate on low heat – stirring constantly until completely melted. Pour mixture on top of blondies and place in freezer for at least 1 hour. Remove from pan and slice. Store leftovers in an airtight container.
Yields 20 bars.
* Or substitute in regular all purpose flour.
** Or 1/2 cup dairy free chocolate chips
