one pot spicy sausage + spinach alfredo


One of the simplest and most delicious pasta dishes you will ever make.  Creamy and guilt free.

Prep Time:  5 minutes

Cook Time:  25 minutes


  • 1.5 tbs olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 lb pork sausage
  • 3 cups low sodium chicken broth
  • 2 cups low fat milk
  • 1 (12 oz.) container pico de gallo (or salsa)
  • 12 oz. pasta of choice (rotini here)
  • 3 handfuls spinach
  • 1 cup shredded gruyere cheese
  • 1/2 cup grated Pecorino Romano cheese


Remove casings from sausage by slicing them lengthwise.

In a large pot, heat the oil on medium high.  Add the onion and saute until translucent – 3 minutes.  Add the garlic and cook until fragrant – 30 seconds.  Next, add the sausage and with a wooden spoon, break up the meat until no longer pink – 5 minutes.  Add the broth, milk, pico de gallo, pasta and season with salt to taste.  Bring to a boil and reduce heat to a simmer.  Cook for 15 minutes or until pasta is al dente.  Add the spinach and toss to just wilt.  Shut off the heat and mix in the cheeses.  Serve.
