oatmeal apple crisp blondies


When your dessert is healthy and delicious.  Great combo here.. apples, oats, almond meal and cinnamon.  Don’t forget the COCONUT vanilla ice cream.

Blondie (Base) Ingredients:

  • 1/2 cup coconut oil, melted & cooled
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • pinch of salt
  • 1/2 tsp cinnamon
  • 1 cup oat flour*

Apple Layer Ingredients:

  • 3 medium apples, diced small
  • 1/3 cup brown sugar
  • 1 tbs almond meal
  • 1/2 tsp cinnamon

Crumble Topping Ingredients:

  • 1/4 cup coconut oil
  • 1/3 cup brown sugar
  • 2/3 cup old fashioned oats
  • 2/3 cup almond meal
  • 1/2 tsp cinnamon

Blondie Directions:

Preheat oven to 350 F.  Line an 8×8″ brownie pan with parchment paper.

In a large bowl, mix the melted coconut oil and sugar.  Then, stir in the remaining ingredients (through the oat flour).  Transfer dough to brownie pan and spread out evenly.  Bake for 15 minutes.

Apple Layer Directions:

Combine apples, brown sugar, almond meal and cinnamon in a medium pot on medium heat until apples are just barely fork tender (stirring constantly).  Set aside.

Crumble Directions:

In a separate bowl, combine the crumble topping ingredients using your fingers, until crumbly.

When blondie base is baked, spread the apples over it and then top with the streusel.  Press down gently.  Bake for another 18-20 minutes.  Allow to cool completely, then chill in the refrigerator for 2 hours.  Remove from pan and slice to serve.  Optional and recommended:  COCONUT VANILLA ICE CREAM.


*Make sure the oats you use are gluten free, if that is a priority to you.
