Easiest and best tasting no bake bar you will make. Reminiscent of rice krispies treats but healthier with the oats and peanut butter. LOVING THESE.

- 3/4 cup unsalted butter
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 2.5 cups quick cook oats*
- 1 cup dairy free chocolate chips
- 3/4 cup peanut butter
Line an 8×8″ brownie pan with parchment paper.
In a medium sauce pan, melt the butter on low heat. Mix in the sugar and vanilla. Lastly combine with the oats and cook for 3 minutes, stirring. Remove from heat.
In a small pot, on low heat, melt the chips and peanut butter until smooth and combined.
Place half of the oat mixture in the pan and spread out evenly. Add the chocolate and spread out evenly (I reserved some to use for top drizzle). Lastly, top with the remaining oats. Freeze for 2-3 hours.
*Make this dish GLUTEN FREE, by using gluten free oats.
