mini oatmeal apple pies


For me, this is quintessential brunch food.  Also perfect for dessert with a scoop of (dare I say it) vanilla ice cream.

Make sure to use gluten free oat flour and oats if that is a priority to you.

Don’t be intimidated by the ingredient lists, most of the items repeat.  You will be SO glad you tried these.  Trust in me… I ate 5 in one day.  Servings size what?

Crust Ingredients:

  • 1 cup milk (any kind will do)
  • 1 cup oat flour
  • 6 eggs, beaten
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/4 cup coconut oil, melted (or butter)

Apple Filling Ingredients:

  • 3 medium apples, peeled, cored & chopped
  • 2 tbs coconut oil (or butter)
  • 1/2 tsp cinnamon
  • juice of 1/2 a small lemon
  • 1/4 cup coconut sugar

Crumb Topping Ingredients:

  • 2 tbs coconut sugar
  • 1/4 cup almond meal
  • 1/4 cup old fashioned oats
  • 1/2 tsp cinnamon
  • 2 tbs coconut oil (or butter)


Preheat oven to 400 F.

Generously spray a REGULAR SIZED MUFFIN TRAY with coconut oil spray or grease it with butter.

In a small bowl, combine the crumb topping ingredients.  Set aside.

In a large bowl, combine the CRUST ingredients.  Mixture will be watery — that’s the way it’s supposed to be.  Pour mixture into muffin slots until 3/4 way full.  Place muffin tray into oven and bake for 15-20 minutes or until golden brown.

In a medium skillet, combine the apple filling ingredients and cook for 5-7 minutes on medium low heat, stirring occasionally.

When the pie ‘crusts’ are done, remove from oven.  They will be puffy at first but will deflate when they cool.  Fill each one with apple mixture.  Top with crumb mixture (will be messy – is ok), and bake for an additional 3 minutes on broil to crisp the tops.  These serve best warm.  Store leftovers in airtight container in your fridge.

Yields 12 mini apple pies.

Special Notes:

  1. You can sub in regular all purpose flour if you don’t want to use oat flour.
  2. Any sugar will do.
  3. The ‘crusts’ are actually a cleaned up recipe of German pancakes.  At first they will bake puffy, but they deflate with a little time and also make for an amazing crust.
