loaded greek style baked fries


I have been wanting to make these for the longest time …  And then, after its all said and done, you feel so silly for waiting on something like this.  Of course my roots are Greek and this is something like a play on a souvlaki without the carby pita.  I love that doughy pita.. so much.  But this is a bit healthier and lighter with all the flavor.19


  • 3 medium russet potatoes
  • 2 tbs olive oil
  • 1 tsp paprika
  • 2 tsp dried oregano
  • salt & pepper to taste
  • 3 chicken breasts, grilled & chopped
  • 1 small red onion, diced
  • 1 cucumber, diced
  • 1 large tomato, diced
  • 1.3 cup chopped black olives
  • 2 tbs fresh dill, chopped
  • 1/3 cup crumbled feta cheese
  • 1/2 cup tsatziki sauce
  • 1 lemon, sliced in wedges


Preheat oven to 400 F.  Line a baking sheet with parchment paper.

Scrub the potatoes clean.  Slice them into fries, skin left on.  In a bowl, mix and coat them with 2 tbs olive oil, paprika, oregano & salt & pepper to taste.  Place them on the sheet, not overlapping, and bake for 25-30 minutes.

When those are done, remove baking tray from oven and top with remaining ingredients (except tsatziki) and place back in oven until feta has started to melt — a few more minutes.  Remove from oven and top with sauce and serve with lemon wedges.

Yields 2-3 servings.
