Greatest entree you will make – loaded with flavor, taste, simplicity. It’s got all the essentials: chicken, potatoes, bacon, cheese and spices.
- 1 lb chicken breasts, cubed
- 2 large idaho potatoes, scrubbed & cubed
- 1/3 cup olive oil
- 1 tbs paprika
- 1 tbs garlic powder
- 1 tbs onion powder
- 1 tbs srirachia sauce (or any hot sauce)*
- 2 tsp salt
- 1/2 tsp ground pepper
- 1 cup shredded mexi blend cheese
- 7 slices bacon, cooked crispy & chopped
- 3 scallions, sliced
Preheat oven to 400 F.
In a large bowl, toss the chicken, potatoes, oil, paprika, garlic powder, onion powder, hot sauce, salt and pepper until all are fully coated. Transfer to a 9×13″ baking dish. Place in oven for 35-40 minutes or until potatoes are JUST fork tender. Midway through toss chicken and potatoes.
Remove from oven and top with cheese, bacon and scallions. Place back in oven for 3 minutes or until cheese has melted.
Yields 4-6 servings.
*If you like it extra spicy, add more hot sauce.
