My mom’s recipe from back in the day.  She is the master.  #oldschool

Everything in one baked delicious dish.

Feel free to make it leaner with ground turkey.

Prep Time:  5 minutes

Cook Time:  20 minutes

Bake Time:  15 minutes


  • 1 lb elbow macaroni
  • 1 tbs olive oil
  • 1 onion, diced
  • 1lb ground beef
  • 1 (18 oz) jar diced tomatoes
  • 1 tbs coconut sugar
  • 1/4 tsp ground nutmeg
  • a pinch of ground cloves
  • 1/4 cup fresh chopped basil
  • 2 cups shredded mozzarella
  • 1/3 cup grated Pecorino cheese


Preheat oven 350 F.

Cook your pasta as per instructions on package (al dente).

In a large pot, heat the oil on medium high.  Add the onion and saute for 2-3 minutes, until translucent.  Add the ground meat and use a wooden spoon to break up the meat until no longer pink – about 5-7 minutes.  Add the diced tomatoes, 1/4 cup water, sugar, nutmeg, cloves, salt and pepper to taste.  Cook the meat sauce until slightly thickens – stirring occasionally – about 15 minutes.  Make sure you taste the sauce and adjust any seasoning to your own preference.  When you shut off the heat, stir in the fresh basil.

In a large bowl, mix the pasta and sauce, 1 cup of the shredded mozzarella and the 1/3 cup Pecorino cheese.  Transfer to a baking dish, top with remaining 1 cup mozzarella and bake for 15 minutes or until cheese is bubbling and golden.

Yields 4-6 servings.
