A healthy spin for the chocolate addict. A very fudgy and rich source of protein. Enjoy!
- 2 tbs coconut oil
- 1/3 cup chocolate chips
- 1/2 cup cacao powder
- 1 cup brown sugar, packed
- 3/4 cup all purpose flour
- 1 1/4 cup Greek yogurt (room temp.)
- 1 tsp vanilla extract
- 1/3 cup mini chocolate chips
Preheat oven to 350 F. Line an 8×8″ brownie pan with parchment paper.
In a small pot, on low heat, melt the oil and the chocolate chips. Continuously stir until smooth. Remove from pan, transfer to a large bowl and allow to cool.
In a large bowl, whisk together the cacao powder, sugar and flour.
Add the yogurt and vanilla to the cooled chocolate mixture and stir to combine. Add the dry mixture to the wet, in intervals, and mix until just combined. Do not over mix. Transfer the batter to the baking pan and even out top with rubber spatula. Top with chocolate chips and bake for 20 minutes. Will look undercooked but still remove from oven and allow to cool in pan for at least 30 minutes prior to slicing.
Store in an airtight container in your fridge.
