flourless savory biscuit cookies

I cannot say enough about this recipe.  They came out beyond expectations, super fast to make and I love the originality of a savory cookie.  The almond meal gives it that biscuit feel in your mouth.  My daughter, (who prefers the yummiest of foods) scarfed 6 down immediately upon arrival.

The only drawback is that I didn’t double up on the batch.


  • 4 oz sausage (2 links, casings removed)
  • 1/2 cup onion, fine chop
  • 1/2 cup green pepper, fine chop
  • 3/4 cup almond meal
  • 1 tsp baking powder
  • salt & pepper to taste
  • 3 large eggs, beaten
  • 1 cup shredded cheddar cheese, divided


Preheat oven to 375 degrees F.  Line a cookie sheet with parchment paper.

In a large pan, mince and saute the sausage, onion and bell pepper, until cooked.  Remove from pan and set aside to cool.

In a large bowl, whisk together the almond meal, baking powder and salt and pepper.

In a separate small bowl, beat the eggs.  Then mix in 1/2 cup shredded cheese.  Pour this wet mixture into the almond meal mix and combine.  Next, add in the cooled sausage and veggies and mix until just combined.

Using a melon baller or large spoon, scoop out batter and place onto cookie sheet.  Top each with a sprinkle of the remaining shredded cheese and press down to flatten the cookies a bit.

Bake for 8-10 minutes.

Store leftovers in fridge.

Yields 13-14 cookies.
