THIS cookie is a rerun in my house – I made them last year and they were gone in 5 hours flat. Its like the magically disappearing cookie. They are so big on taste – a must make in my opinion.
I used a honey crisp apple but you can use anyone you have on hand.
- 1.5 cups almond meal/flour
- 1/2 cup shredded coconut, unsweetened
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 1/2 cup coconut sugar
- 1.5 tsp cinnamon
- 1/3 cup coconut oil, melted & cooled
- 1 egg, beaten
- 1/3 cup unsweetened applesauce
- 1/2 tsp vanilla extract
- 1 large apple, peeled, cored & finely diced
Preheat oven to 350 F. Line a cookie sheet with parchment paper.
Combine all dry ingredients in a medium sized bowl.
In a separate bowl combine all wet ingredients.
Add the wet to the dry and combine and lastly, fold in the diced apple.
Drop the batter by the tablespoon full (I used a melon baller) onto a parchment lined cookie sheet – the fritters will expand, so be sure to leave room in between.
Bake for 15-17 minutes or until they are firm and turning golden brown at edges. Make sure to watch them towards the end.
Yields 20 cookies.
