This simple recipe is so many things rolled up into one: paleo, grain free, gluten free, sugar free, easy to make, and the list goes on. WAIT, and they are really delicious. Okay, last one, PROTEIN!!! We devoured them with fresh fruits and topped em with coconut shreds and maple syrup.
- 2 large ripe bananas
- 1/2 cup almond butter (or any nut butter)
- 3 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
You can throw everything into a blender or processor until just combined OR just mash the banana, beat the eggs and mix everything in a large bowl.
Feel free to sub in peanut butter if you can’t find almond butter (ofcourse doing this will de-paleo them).
Heat a non stick skillet on high. When it get super hot, pour the batter by the 1/4 cup full. IMMEDIATELY LOWER THE HEAT TO LOW OR MEDIUM LOW. cook for 3 minutes per side.
Yields 10 silver dollar pancakes.
