double peanut butter cookies

My all time favorite cookie — of course I am a peanut butter worshiper.  And this cookie delivers fully for me.  Do not hesitate to try it.  This is a classic recipe that you will (no doubt) keep handy.


  • 2/3 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, room temp.
  • 1 cup creamy salted peanut butter
  • 1 cup packed light brown sugar
  • 1 large egg, beaten
  • 3/4 tsp vanilla extract
  • 2/3 cup peanut butter chips


Line your cookies sheets with parchment paper.

In a small bowl, whisk together the flour and baking soda and set aside.

In a large bowl, using a rubber spatula, mix the butter, peanut butter and sugar until smooth.  Add the vanilla and egg and quickly whisk together until smooth.

Add the flour mixture to the large bowl and mix until all is incorporated.  Lastly, fold in the chips.

Cover dough and refrigerate for 30 minutes.

Preheat oven to 375 F.

Form small balls with the dough, place on cookie sheet and slightly flatten them.  Bake for 8-10 minutes.  Allow them to cool for atleast 10 minutes.

Yields 30 cookies.
