cinnamon roll banana bread (vegan & gluten free)


What can I say about this incredible, life-altering creation.  It is truly a masterpiece, if i do say so myself (humility, apparently, is not one of my strong suits).  Make this for your family and friends and they will adore you and kiss the ground you walk on.  Just saying.

Banana Bread Ingredients:

  • 1 cup gluten free flour*
  • 1/2 tsp xanthan gum*
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • 2 small ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup**
  • 1/3 cup almond milk***
  • 1 tsp vanilla extract

Date ‘Filling’ Ingredients:

  • 12 dates, pitted
  • 1/4 cup +2 tbs water
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • pinch of salt

Icing Ingredients:

  • 1/2 cup powdered sugar (sifted)
  • 1 tbs almond milk***
  • 1/4 tsp vanilla extract


Preheat oven to 350 F.  Spray or grease your loaf pan with coconut oil or line with parchment paper.

In a large bowl, mix the flour, baking soda, baking powder, cinnamon and salt.  In a separate medium bowl, mix the bananas, coconut oil, maple syrup, milk and vanilla.  Slowly add the wet mixture to the dry bowl and mix until just combined.  Transfer batter to your loaf pan.

In a food processor, pulse all of the Date Filling Ingredients until smooth.  Add this mixture to the top of the banana mixture and spread out evenly (see pic below).

Bake for 45-50 minutes or until toothpick comes out clean.  Allow loaf to cool completely on wire rack before icing.

Icing Directions:

In small bowl, combine all ingredients and stir until completely smooth.  Pour glaze evenly on top of banana loaf and allow to set 30 minutes.


  1. *Use regular all purpose flour if gluten free is not a priority to you and omit the xanthan gum.
  2. **Use any liquid sweetener in lieu of maple syrup (i.e. honey, agave, etc).
  3. ***Any milk works.
