buffalo chicken meatballs


Had picked up some blue cheese at TJ’s in anticipation of making SOMETHING buffalo chicken.  Was planning on doing the traditional buffalo chicken sandwich or salad, but then, this happenned.

These are so moist and spicy and they blew away all my expectations.  Would serve great at a party or for dinner in a sub or wrap.

Make them.  Love them.


  • 1 lb ground chicken
  • 1/4 cup crumbled blue cheese
  • 1/3 cup hot sauce (+1/3 cup more later)
  • 1 small carrot, shredded
  • 1 celery stalk, minced
  • 3/4 cup panko bread crumb
  • 1 egg
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder


Preheat oven to 400 F.  Line a baking sheet with parchment paper or spray with vegetable oil.

Gently combine the ground chicken, blue cheese crumbles, 1/3 cup hot sauce, carrot shreds, celery, panko, egg, onion powder and garlic powder using your hand, until all is incorporated.

Form your meatballs – about 4 inches in diameter.  Place on baking sheet and bake for 20-25 minutes.

In a large bowl, toss the meatballs with 1/3 cup hot sauce.

The sauce picture is just 1 small container Greek yogurt (whipped) with 1 tbs crumbled blue cheese…nothing fancy but a very nice accompaniment for dipping.

Yields 22 meatballs.
