broccoli melts

The greatest side dish or snack you will ever concoct.  Do yourself a favor and make these for a weekend lunch or munchie time.

Thinking to add FETA next time i make these.


  • 1 lb broccolini (or regular broccoli)
  • 2 tbs olive oil
  • 4 cloves garlic, minced
  • red pepper flakes
  • zest of 1 lemon
  • 1/3 cup grated pecorino romano cheese
  • 8 slices of bread
  • 8 thin slices provolone cheese


Preheat broiler.

In a large skillet, heat 1 inch deep  water puddle until boiling.  Add the broccolini, cover and steam for 2 minutes.  Remove from pan and transfer broccolini to paper towels to remove excess moisture.  Chop the broccoli into small pieces.

Wipe the skillet clean and place back on heat, with the oil.  Heat the oil on medium and then add the garlic and pepper flakes and stir for 30 seconds.  Add the broccoli back into the pan and mix to coat for another minute.  Transfer mixture to a bowl and mix with lemon zest, pecorino romano cheese and salt to taste.  Top each slice of bread with the broccoli mixture and then with a slice provolone cheese.  Place in the oven and bake until cheese is melted.
