So soft and chewy – just perfection. Again, if you know me, you know my affinity for anything peanut butter. It must be coursing through my veins. This recipe though, is incredible. Its priceless really to come across such a gem. Make them and you’ll see what it is I’m referring to. These truly are the best ever peanut butter chocolate chip cookies. Just trust me.
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, room temp.
- 1 cup brown sugar
- 1 egg
- 3 tbs 2% milk
- 1 tsp vanilla extract
- 1.5 cups all purpose flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1 cup mini chocolate chips
Preheat oven to 375 F. Line 2 cookie sheets with parchment paper.
In a large bowl, using a hand mixer, mix the peanut butter, butter and sugar until blended. Beat in the egg, milk and vanilla.
In a medium bowl, whisk together the flour, baking powder and salt.
Add the dry mixture to the wet, a little at a time, and mix to combine. Form balls and place on cookie sheets. Using a fork, flatten the tops.
Bake for 8-10 minutes. DO NOT OVER BAKE, even if they look undercooked. They will be perfectly soft & chewy.
Yields 36 cookies.
