Amazing, crispy and juicy chicken fries. They were gone in minutes. I used ketchup for the dip.
- 1/2 cup flour
- 2 eggs
- 1/3 cup light coconut milk
- 2 cups bread crumb
- 1.5 tsp chili powder
- 1.5 tsp onion powder
- 1.5 tsp garlic powder
- salt and pepper to taste
- 4 chicken breasts
Preheat oven to 425 F. Line a large rimmed baking sheet with parchment paper.
In 3 separate tuppers, house the flour in one; beat the eggs and coconut milk in the other and in the third, whisk together the bread crumb, chili powder, onion powder, garlic powder and salt and pepper to taste.
Slice each chicken breast lengthwise, so you have two thin cutlets. Then cut them into thin, long strips (like french fries shape).
Dredge them first in the flour, then in the egg mixture (allowing excess to drip off) and then dredge in the breadcrumb. Place them on the baking sheet and bake for 15 minutes or until cooked through.
Yields 4 servings.
