The best side dish or party popper you could possibly make. They will disappear at super speed. My kids devoured them and they are not fans of the broc. Will definitely be on my table at Christmas time.
The only thing I would change next time, is that I would make more of them. Definitely double the recipe!
- 1 large head broccoli
- 1/2 cup almond meal
- 1/2 cup shredded Parmesan cheese
- 2 cloves garlic, minced
- 1 egg, beaten
- 1/2 tsp onion powder
- salt & pepper to taste
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
Cut broccoli into small florets and steam or cook. Then finely chop them (should be about 2 cups post chop). Using a paper towel, gently absorb any excess water by patting em down – do not mash.
Add all ingredients to a large bowl and combine. Form your nuggets and place them on the baking sheet. Bake for 20-25 minutes. Flick on the broiler at the end for a few minutes to give the tops a nice golden color.
Yields 12 nuggets – 3 servings.
- If you don’t have almond meal, just throw some raw almonds into your food processor and process them until they’re coarsely ground.
- If being gluten free is not a priority to you, then you can use bread crumb instead of the almond meal.
