Bacon wrapped scallops never disappoint at a party or as an appetizer for dinner. I love these. So simple to make and so delicious to eat.
- 1/2 lb nitrate/nitrite free bacon, cut into halves or thirds
- 2 lbs large scallops
- olive oil
- salt & pepper to taste
Preheat oven to 450 F.
Use a toothpick to fasten the bacon strips to the scallops.
Season each with salt & pepper and drizzle each with olive oil.
Bake for 15 minutes (on a slotted broiler pan) or until scallops are opaque and bacon is crisp.
