I’m very excited to share this recipe. We are constantly prowling for an easy and healthy lunch or snack option. These ideas are hard to come by when you’re hungry and alone in your kitchen and can easily sway in the not so healthy direction. Or conversely, the ultimate trap, head out for some quick fix food.
If you have a hummus recipe, sub that in. I have been looking for a great hummus to buy at the supermarket. If you have any good suggestions I would love to hear em. Please comment below!
In the mealtime, you will love this combination. I would recommend to pack on the hummus – don’t be cheap. And feel free to (obviously) add more spices or substitute in your own… as you prefer. You can try salt, paprika, red pepper flakes, hot sauce or garlic powder… the options are endless. GO NUTS!
- 2 large flour tortillas
- 1/2 cup hummus
- fresh parsley
- 1/4 tsp ground cumin
- 1 avocado, sliced
- 1/4 cup crumbled feta (or queso fresco)
Heat your tortillas on medium low, in a large non stick skillet until warm. Spread hummus on one half of the each tortilla (see photo below). Layer with slices of avocado, sprinkle some parsley leaves, add the crumbled feta and cumin. Fold over the tortillas and place back on the warm skillet. Cook each side until golden brown on medium heat. Remove from skillet and cut in half. Serve immediately.
Yields 2 servings.
