If you’re all about flourless – then these are the stacks for you and yours!
Delicious, easy to make (you just need a blender). Add chocolate chips or blueberries while they are cooking, or just top them with some fresh strawberries and maple syrup.

- 3 eggs, room temp.
- 1/3 cup canned coconut milk
- 1 tbs unsalted butter, melted*
- 1 tbs maple syrup (or honey)
- 1 tsp vanilla extract
- 1/4 tsp apple cider vinegar
- 1.5 cups almond flour
- 1/2 tsp baking soda
- 1/4 tsp salt
Place all of the liquid ingredients in your blender, then add all of the dry ingredients on top. Blend on low to start, then increase to high and blend at least 1 full minute.
Batter will be thick.
Heat your pan with butter or oil on high heat. Add batter to form silver dollar sized pancakes. Reduce heat to low and cook about 3-4 minutes each side.
Yields 2-3 servings.
*Make it dairy free by subbing in melted coconut oil for the butter.
