zucchini pizza boats with turkey sausage

This dish has such great flavor and brings life to the bland tasting (but sooo good for you) zucchini.  you can use any type of sausage or any type of ground meat.  perfect for a snack, light meal, party appetizer or side dish.


  • 3 zucchinis
  • 1 tbs olive oil
  • 2 turkey sausage links, casings removed
  • 1.5 cups baby tomatoes, chopped
  • shredded Parmesan or mozzarella to taste
  • Salt & pepper to taste


Preheat oven to 350 F.

Cut each zucchini in half, lengthwise and scoop out flesh ( I used a small melon baller). Dice the flesh.

In a large non stick pan, heat oil on medium high heat. Cook sausage, (breaking up with a wooden spoon), tomatoes & zucchini flesh, for about 5 minutes. Seasoning with salt & pepper.

Fill zucchini “shells” with sausage mixture and place on a slotted broiler pan.

Bake for 30 minutes.
Remove from oven, add shredded cheese and bake for another 5 mins or until zucchini is tender to the fork. Cover them with foil if you need extra time, as to prevent the tops from browning.

Yields 3 servings.
