whole wheat banana waffles

There’s nothing I enjoy more than a big, late breakfast on the weekends.  A nice strong Greek coffee that you can drink at your leisure and a sweet plate of delicious waffles.  This recipe should be called fluffy banana waffles.  They are heavenly, especially with the fresh berries and powdered sugar.  Maple syrup is optional guys.

Ingredients:

  • 3/4 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1.5 tsp baking powder
  • 1/4 tsp sea salt
  • 3/4 cup almond milk
  • 2 eggs, beaten
  • 2 tbs coconut oil, melted
  • 1 ripe banana, mashed
  • 1 tsp vanilla extract

Directions:

Combine all of the dry ingredients in a large bowl.  Next, add all of the rest of the ingredients and mix until incorporated.

Follow your waffle maker’s instructions.

Yeilds 4-5 waffles.
