This is THE cookie dough to make – no added sugar, simple, healthy and DELICIOUS. Very very happy with the way these turned out. And in case you’re wondering, yes, I love stacking my food.
- 1 cup gluten free oats
- 10 dates, pitted
- 1 cup almond butter
- 1 tsp vanilla extract
- 2 tbs water
- 1/3 cup vegan mini chocolate chips
Add the oats to a food processor and process until coarsely ground. Add to it the dates, almond butter, vanilla and water to the food processor and mix until a dough forms and all look incorporated. Transfer mixture to a bowl and add the chocolate chips, use your hands to combine.
Form your cookies as if they were meatballs and then flatten them out in your palm. Place on tray and freeze for 30 minutes. Remove and enjoy. Store leftovers in your refrigerator.
Yields 20 cookies.
- Use any creamy nut butter.
- I used old fashioned oats.
