tomato fritters (tomatokeftedes)

So last summer my fiance and I travelled to Greece and had an incredible time, eating, drinking and beaching.  Best trip ever.  We are both Greek-American and really know our way around the country.

One of the places we visited was Santorini, a breath-taking, glorious island — see pic below of view from our hotel room — I highly recommend you visit, if you haven’t already.  Santorini is famous for their tomato fritters (or tomatokeftedes = tomato balls). Obsessed.  You’re definitely gonna want to try this simple, delicious, wholesome Greek recipe.

Pairs very well with my TSATZIKI YOGURT SAUCE.

Ingredients:

  • 2 cups chopped mini tomatoes*
  • 1/2 tsp salt
  • 2 or 3 scallions, chopped
  • 3 tbs minced fresh dill
  • 3 tbs minced fresh mint
  • 3/4 cup all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • olive oil for frying

Directions:

*For the tomatoes, make sure to get all the seeds and juice out.

In a large bowl, mix the tomatoes, salt, scallions, dill & mint.  In a medium bowl, whisk together the flour, baking soda & baking powder.  Add the dry mixture to the tomato mixture and mix until incorporated – season with additional salt & pepper to taste. Form small tomato balls and place on wax paper.  Heat 1/8 inch oil in a large skillet on medium high heat.  When oil gets hot, place the formed tomato balls in your pan and flatten them with back of spatula.  Lower heat to medium and cook until golden brown and crispy — about 4-5 minutes per side.

Yields 12 fritters.
