the anytime quesadilla

 

I call this gorgeous mess the ‘anytime quesadilla’ because I personally eat eggs for breakfast, lunch AND dinner – I am an equal opportunity consumer.  So this dish is combining AM with the PM and you will love every bite of it.

Ingredients:

  • 1 (7 oz.) package turkey bacon
  • olive oil
  • 1 onion, chopped
  • 1 bell pepper, seeded + chopped
  • 1 jalapeno, seeded + fine chop
  • 8 eggs, beaten
  • 6 tortillas
  • shredded cheddar cheese
  • Optional Add Ins:  Avocado, Greek yogurt, Hot Sauce

Directions:

Cook the  bacon, allow to cool and then break it up into large pieces.  Set aside.

In a large skillet, saute the onion and peppers in 1 tbs olive oil – until soften – about 4 minutes, season with salt & pepper to taste.  Set aside.

In the same skillet, heat another drizzle of oil and cook the eggs, scramble style.  Season with salt to taste.  Remove eggs and set aside.

Again, in the same skillet, heat your tortilla on medium low heat.  Add some cheese to the bottom, then layer on the rest of the ingredients – some veg mix, eggs and the bacon.  Top with a bit more cheese and top with a tortilla and press down.  Flip over the quesadilla to heat on the other side.  Remove from pan, place on a large flat surface and slice with a pizza cutter.  Repeat.

Yields 4 servings.
