vegan single serving chocolate chip cookie

For when you crave the cookie but do not want to make an entire batch …  here is the solution to all your problems.  So delicious and simple to make.

Ingredients:

  • 1.5 tsp coconut oil
  • 1 tbs brown sugar
  • 1 tbs maple syrup
  • 1/4 tsp vanilla extract
  • pinch of salt
  • 1/8 tsp baking powder
  • 2 tbs + 2 tsp almond flour*
  • 1 tbs dairy free mini chocolate chips

Directions:

Preheat oven to 350 F.  You need a small ramekin for this.  Place it on a cookie sheet.

Place the coconut oil in the ramekin and in the oven (on the cookie sheet) while its preheating for it to melt.  Remove from oven and mix the rest of the ingredients in (except the chips) to form the dough.  Press it down evenly and top with chocolate chips – press them in.  Bake for 7-10 minutes.  Enjoy!

Yields 1 serving.

Notes:

*You can substitute all purpose flour for the almond flour

If you don’t care about being vegan, you can use butter instead of coconut oil, honey instead of maple syrup and regular chocolate instead of dairy free.
