simple baked pizza fries

 

The easiest most delicious alternative to pizza you will ever come across.  We devoured them within minutes.  Whatevs, its gluten free.

I was going to add sauce prior to the cheese and pepperoni but decided against it at the last moment.  I’m glad.  They absolutely carry themselves without it.  No need whatsoever.

Perfect for a get together – double or triple the recipe if so.

Ingredients:

  • 3-4 medium russet potatoes
  • 3 tbs peanut oil
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp salt
  • 1.5 cups shredded mozzarella cheese
  • 10 slices pepperoni

Directions:

Preheat oven to 400 F.  Line a large rimmed baking sheet/dish with parchment paper.

Scrub your potatoes clean.  I left the skin on.  Slice potatoes into french fries (not too thick).  Toss em in a large bowl with the oil and spices, to coat.  Transfer them to the baking sheet and spread them out so that none are overlapping.  Bake for 25 minutes or until just tender and crispy.

You can leave them on the baking sheet and bring them closer together to form a mound.  I transferred mine to a 9×9″ baking dish and covered them with cheese and pepperoni.  Lower oven to 350 F.  Place the dish in the oven and bake for an additional 5 minutes or until cheese has melted and pepperoni is cooked.

Yields 2-3 servings.
