The cookie to take a chance on… they are chewy, gooey and just the right salty and sweet. I originally wanted to call these Vodka Chocolate Chip Cookies because of the potato connection, but opted out since potatoes can make so much more than just vodka.
These are def on the cheat scene, but absolutely worth it.
- 2 cups all purpose flour
- 1/2 tsp baking soda
- 10 tbs unsalted butter, melted & cooled
- 1 cup brown sugar
- 1 egg + 1 yolk, room temp., beaten
- 1.5 tsp vanilla extract
- 1.5 cups crushed kettle cooked potato chips
- 1 cup dark chocolate chips
Preheat oven to 325 F. Line 2 cookie sheets with parchment paper.
In a medium bowl, whisk together the flour and baking soda.
In a large bowl, whisk together the butter and sugar until combined. Add the egg & yolk, and vanilla and combine. Mix in with a rubber spatula the flour mixture — a little at a time — until fully incorporated. Feel free to use your hands if necessary. Fold in the all the chips (potato and chocolate).
Form 1 inch balls and place on your cookie sheets. Bake for 12-14 minutes. Do not over bake. Allow to cool slightly.
Yields 30 cookies.
