The ideal breakfast cookie because its not too sweet and very hearty due to the oatmeal. And obviously its got just the right mix of nutella and banana. Can’t get enough of these!!

- 1.5 cups flour
- 1 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup shortening
- 3 ripe bananas, mashed
- 1 egg
- 1.75 cups old fashioned oats
- 1/3 cup Nutella
Preheat oven 400 degrees F. Line a cookie sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking soda and salt, until incorporated.
Using a hand held electric mixer, mix in the shortening, and then beat in the bananas and egg. Mix in the oats. Lastly, take a knife and “cut” in the Nutella so that it is thick stripes in the batter — do not mix it in completely.
Using a spoon or melon baller, drop the batter onto the cookie sheet. The batter will be very sticky and look loose… don’t fret… thats the way its supposed to be.
Bake for 8-10 minutes.
Yields 35 cookies.
