A creamy delicious dessert comprised of an amazing combination of coconut and lemon flavors. So freakin good.
- 1.5 cups all purpose flour
- 1/2 cup powdered sugar
- 3/4 cup cold, unsalted butter
- 4 eggs
- 1 1/3 cups sugar
- 1/2 cup fresh squeezed lemon juice
- 1 tsp baking powder
- 1 cup flaked coconut shreds
Preheat oven to 350 F. Line a 9×13″ baking dish with parchment paper.
Combine the flour, powdered sugar and butter in your food processor and pulse for about 2 minutes or until crumbly. Transfer to baking dish and press down to form an even layer. Bake for 15 minutes.
While that’s happening, beat the eggs, sugar, lemon juice and baking powder in a bowl, using a hand held electric mixer, until just combined. Pour this over the crust and sprinkle with the coconut. Bake for 20-25 minutes or until golden brown. Allow to cool prior to slicing.
