hot chocolate cookies

These cookies have BLOWN ME AWAY.  You must partake.. I would not lead you astray.  For the holidays or just for fun on the weekend.

They hold all the elements of a hot chocolate.. a beautifully chewy chocolate cookie base.  A marshmallow surprise center and a perfect chocolate frosting to top.  Just the right cookie for the season.  Trust me.  I cannot rave enough.. I am obsessed.  I wish I could share them with your rn.

Base recipe from Martha Stewart’s Cookies Cookbook.

Cookie Ingredients:

  • 1 3/4 cups flour
  • 3/4 cup cacao powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temp.
  • 1 cup brown sugar
  • 1 egg
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 12 marshmallows, halved crosswise

Frosting Ingredients:

  • 3 tbs unsalted butter, room temp.
  • 2 tbs cacao powder
  • 1.5 cups powdered sugar
  • 3 tbs milk
  • 1/2 tsp vanilla extract

Directions:

Preheat oven to 375 F.  Line 2 cookie sheets with parchment paper.

In a large bowl, whisk together the flour, cacao powder, baking soda and salt.

In a separate bowl, using an electric hand mixer, beat the butter and sugar for a 2 minutes.  Next, mix in the egg, milk and vanilla until combined.  Mix in the flour mixture, 1/2 cup at a time, until combined.

Using a small ice cream scooper, drop dough onto the cookies sheets, spacing 2 inches apart.  Bake cookies, rotating half way through, 10 minutes.  Remove from oven and immediately press marshmallow halves on top of each cookie.  Bake for additional 2 minutes and remove from oven.  Transfer to cooling racks and allow to cool completely.

Frosting:  In a small saucepan, on low heat, melt butter and cacao powder, stirring constantly until smooth.  Place powdered sugar in a medium bowl.  Add to it the butter/cacao mixture, milk and vanilla.  Mix all together until smooth, frosting consistency occurs.  Cover each marshmallow with frosting.

Yields 24 cookies.
