healthy chicken avocado rolls

GO OUT AND GET THESE INGREDIENTS RIGHT AWAY… I am obsessed with these sandwiches.  All of our favorite things people.  Chicken, avocado, tomato, with healthy creamy sauce.  Utter and total perfection for lunch or any time.  I could eat this every day.

Ingredients:

  • 2 celery stalks, chopped
  • 2 green onions, chopped
  • 2 avocados, sliced
  • 3 tbs greek yogurt
  • 2 tbs mayo
  • 1 tsp dijon mustard
  • 1 tsp sugar
  • salt & garlic powder to taste
  • 2 chicken breasts, cooked & cubed
  • 4 sandwich rolls or pita pockets
  • 1 large tomato, sliced
  • romaine lettuce

Directions:

In a medium bowl, whisk together the yogurt, mayo, mustard, sugar, salt & garlic powder until combined.  Add the chopped celery, onions, avocado, chicken and toss to coat all.  Assemble sandwich with sliced tomato and romaine lettuce.

Yields 4 servings.

Notes:

You can make this ahead (refrigerate), just leave out the avocado and mix it in when you are ready to eat.
