flourless cauliflower pizza nuggets

  • 1 large head cauliflower
  • 2 eggs
  • 1 cup shredded mozzarella
  • 1/4 cup shredded parmesan
  • 3 tbs finely chopped fresh basil
  • 1 tbs garlic powder
  • salt & pepper to taste
  • 1/2 cup marinara sauce
  • 1/4 cup mini pepperoni


Preheat oven to 400 degrees F.  Line a rimmed baking sheet with parchment paper.  Pulse the cauliflower florets in a food processor until they resemble fine crumbs.  Transfer to a large bowl.  Add eggs, 1/3 cup mozzarella, Parmesan, 2 tbs fresh basil, garlic powder and salt & pepper to taste.  I used my hands to incorporate the mixture.  Form small patties/nuggets (mixture will be wet).  Place on baking sheet and bake for 20 minutes.  Remove from oven and layer each with sauce, then shredded mozzarella and top with the pepperoni.  Bake for an additional 5-7 minutes.  Garnish with remaining basil and serve hot.

Yields 6 servings.
