flourless banana crunch muffins

I had to control myself around these.. I wanted to destroy the entire lot.  Banana muffins are my go-to breakfast always.  Add some crunchy texture and they are winners.

Ingredients:

  • 2 ripe bananas
  • 1 egg, beaten
  • 1/4 cup smooth peanut butter
  • 1 tsp vanilla extract
  • 1/4 cup honey (or maple syrup)
  • 1/2 cup rolled oats
  • 1/4 cup almond meal
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup granola

Directions:

Preheat oven to 375 F.  Line a regular muffin tray with 9 muffin liner/cups.

Mash the bananas in a large bowl.  Add the rest of the ingredients (except the granola) and mix to combine.  Fill your muffin liner 3/4 of the way full.  Top each with some granola.

Bake for 20-25 minutes (or until firm to the touch).  Remove tray from oven and allow to cool.

Yields 9 regular sized muffins.
