everything peanut butter pie

If you’re a peanut butter lover like I am, then YOU ARE EXACTLY WHERE YOU NEED TO BE RN.  Especially for the holidays.  You, your friends and family will adore you.  Yes, you will adore yourself for making this thing.

Crust Ingredients:

  • 20 peanut butter Oreos (or regular Oreos)
  • 5 tbs unsalted butter, melted

Ganache Ingredients:

  • 3/4 cup heavy cream
  • 6 oz semi sweet chocolate chips

PB Filling Ingredients:

  • 3/4 cup heavy cream
  • 8 oz pckg cream cheese (room temp)
  • 1 (16 oz) jar creamy peanut butter (room temp)
  • 3/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped Reeses pieces

Directions:

Preheat your oven to 350 F.  Grease a 9″ pie dish with butter.  Set aside.

CRUST:  In a food processor (or blender) pulse Oreos until there is a fine crumb.  In a large bowl, combine the crumbs and melted butter.  Press this mixture into your pie dish, evenly.  Bake for 10 minutes.  Allow to cool as you prepare the rest of the layers.

GANACHE:  Place the chocolate chips in medium bowl.  Heat the heavy cream in a small sauce pan on medium.  Once it begins to boil, remove from heat and pour over the chips.  Stir the two together until smooth.  Set aside to cool and slightly thicken.

PB FILLING:  Using a hand mixer, beat the heavy cream until it resembles a thick ‘cool whip’ texture… takes about 4-5 minutes.  In a separate large bowl, beat together the cream cheese, peanut butter, powdered sugar and vanilla until smooth.  Next, GENTLY fold in the whipped heavy cream.

Spread the peanut butter filling on top of the cooled crust.  Then, spread over it the chocolate ganache.  Sprinkle with chopped Reeses pieces.  Chill for 4-5 hours or overnight.  Slice and serve cold.
