cookie dough brownie oat bars

 

I feel like this combination is really the best of the best.  And it was beyond easy to throw together.

Brownie Ingredients:

  • 1/2 cup dairy free chocolate chips
  • 1/3 cup coconut oil
  • 1/2 cup light brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1/2 cup oat flour

Cookie Dough Layer Ingredients:

  • 4 tbs coconut oil, melted
  • 3 tbs cane sugar
  • 2 tbs light brown sugar
  • 2 tbs almond milk
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1/3 cup dairy free mini chocolate chips

Directions: 

Preheat oven to 325 F.  Line an 8×8 brownie pan with parchment paper.

Brownie:  In a small pot, melt the coconut oil and chocolate chips on low heat.. stirring constantly until smooth.  Remove from pot and allow to cool.  In a medium bowl, combine the sugar, eggs, vanilla, chocolate mixture.  Slowly add the flour until fully combined.  Transfer and spread out in the pan to evenly cover.  Bake for 20-25 minutes.  Remove from oven and allow to fully cool.

Cookie Dough:  In a medium bowl, combine the melted coconut oil, sugars, milk and vanilla.  Add the flour slowly until incorporated.  Lastly fold in the chips.  Transfer to the top of the cooled brownie and evenly spread it out.

Place the baking pan in your freezer for a minimum of 1 hour or until set.  Remove from pan and slice.

Keep leftovers in an airtight container in your refrigerator.

Notes:

  1. If you don’t have oat flour on hand, you can always make some:  Throw your old fashioned oats into the food processor and grind up until it reaches flour consistency.
  2. Make sure your oats/oat flour is gluten free if that is a priority to you.
  3. You can sub in regular all purpose flour if you like.
  4. You may sub in unsalted butter for the coconut oil if you prefer.
