chopped chickpea greek salad

 

The easiest lunch or side salad you will ever toss around. Β And the taste is fantastic.

Ingredients:

  • 1 (15 oz) can chickpeas, drained & rinsed
  • 1/2 red onion, chopped
  • 1 yellow bell pepper, seeded & chopped
  • 2 cups grape tomatoes, sliced
  • 2 carrots, peeled & diced
  • 1 cucumber, diced
  • 3 stalks celery, sliced
  • 1/3 cup kalamata olives, sliced
  • 4 oz feta cheese, cubed

Dressing Ingredients:

  • 1/4 cup olive oil
  • juice of 1 lemon
  • 1 large clove garlic, grated
  • salt & pepper to taste

Directions:

Whisk together the dressing ingredients.

Toss all salad ingredients in a large bowl with the dressing and serve.

Yields 4 servings.
