My ideal breakfast bar! Not too sweet since most of the sweetener is coming from the bananas. I am extremely pleased with the way these turned out. Perfect for a healthy snack as well.
In addition, you can make these dairy free by omitting the white chocolate drizzle on top. Or you can sub in dairy free chocolate chips and keep the drizzle.
- 2 medium ripe bananas
- 1/4 cup coconut oil, melted
- 1/4 cup brown sugar, packed
- 1 egg, beaten
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup flour
- 1 cup old fashioned oats
- 1/3 cup chopped walnuts
Optional White Chocolate Drizzle:
- 1/4 cup white chocolate chips
- 1 tsp coconut oil
Preheat oven to 350 F. Line an 8×8″ brownie pan with parchment paper.
In a large bowl, mash your bananas with a fork. Stir in oil and sugar with a rubber spatula. Stir in egg, cinnamon, vanilla and salt. Then, stir in baking soda. Add flour and stir until just combined. Lastly, fold in the oats and walnuts. Transfer mixture to the pan and spread out evenly.
Bake for 20 minutes. Allow to cool completely prior to slicing. Store in airtight container.
Optional Drizzle: Melt the oil in a small pot on low heat. Add the chips and stir constantly until all is melted and smooth. Using a deep spoon. drizzle on sliced bars.
