crunchy baked honey garlic chicken

 

This is the time to forget about high sodium takeout… A definite go-to for a quick and delicious weeknight meal.  Love the mix of spicy and sweet.  Pairs perfect with a mixed green salad or some brown rice and broccoli.

Chicken Ingredients:

  • 1.3 lbs chicken breasts
  • 1 cup flour
  • 2 tsp salt
  • 1 tsp ground pepper
  • 1 tbs paprika
  • 1 tbs onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground sage
  • 1 egg + 1 white
  • 2 tbs water

Sauce Ingredients:

  • 1 tbs olive oil
  • 3 large cloves garlic, minced
  • 1 cup honey
  • 1/4 cup low sodium soy sauce

Directions:

Preheat oven to 425 F.   Line a baking sheet with parchment paper.

Slice the chicken breasts lengthwise, into thin cutlets.

In a large flat tupper, whisk together the flour and spices.  In a bowl, beat the eggs and water.

Dredge each cutlet into the flour mixture, then dip into the egg mixture and then back into the flour mixture, pressing to adhere.  Place cutlets on baking sheet (do not crowd or they will come out soggy) and bake for 10-14 minutes — flipping each piece midway through (i.e. 5-7 minutes per side).

In a small pot, heat the olive oil.  Add the garlic and saute on medium low heat until softens.. being careful not to brown the garlic.  Stir in the honey and soy sauce and bring to a simmer.  Cook for 5-10 minutes stirring occasionally.  Top chicken with the sauce and serve warm.

Yields 4 servings.
